It's hard to pinpoint what makes this dish so delicious, but some people say blueplate serves the best risotto they've ever tasted. Chef James Malaby credits the cooking process, which is all about stirring, he says. Not every chef puts in the time needed to keep the character of the rice, and he is proud to say he does. Malaby's popular corn risotto includes creamy rice mixed with corn and parmesan cheese and is served with a hanger steak.
